- BBQ CHICKEN CHOPPED SALAD1/2 head iceberg, cut into 1/8' strips 1/2 head romaine, cut into 1/8' strips chips, 12 large basil leaves, cut into strips 1 lb jicama cut into strips 2 cups jack cheese 1 cup black beans (drained and rinsed) 1 cup canned sweet white corn, drained 3 T fresh chopped cilantro 1/2 cur sweet and spicy BBQ sauce 1/4 cup sliced scallion greens Cook chicken and then chill. Cut into pieces and toss with the BBQ sauce. Cover and refrigerate. Mix all ingredients and chips and drizzle with BBQ sauce and a little ranch dressing. Garnish with scallions and a fresh lime...ENJOY!!
